Willard L. Roberts, 96
Willard L. Roberts, 96, died March 26, 2000 after a brief illness. He had a long and distinguished career as a biochemist and as an expert in human and animal nutrition and food manufacturing processes.
Dr. Roberts was born March 24, 1904 in Milton Junction, Wisc. to Frederick and Bertha (Binfold) Roberts. He graduated from Milton Union High School in 1923 where he participated in basketball, football and track. He attended Milton College where he was active in the same sports and graduated cum laude in 1927.
In 1928 he married his college sweetheart, Verone Marquette. Following a master’s degree at the University of Wisconsin in 1932, he began doctoral studies at the Department of Agricultural Chemistry in Madison. He played a major role in the isolation of dicumerol which was later developed into Warfarin and into Coumadin, now used as a preventative for heart attack and stroke.
For a total of five years his graduate studies were interrupted while he worked as a chemist at the North Dakota Regulatory Department where he analyzed foods, drugs, petroleum products and pioneered in the area of forensic toxicology. He earned a Ph.D, in biochemistry in 1937. Following graduate studies he spent 10 years at General Foods Corporation, the first four at Post Products in Battle Creek, Mich. where he perfected the modern process for manufacturing Grape-Nuts Cereal and held a patent on Grape-Nuts Flakes. As director of research he was instrumental in launching several of the Post Cereal products.
During the next four years he was section head at General Foods Central Laboratories in Hoboken, N.J., where he directed divisions of biochemistry, analytical chemistry, chemical and mechanical engineering, General Seafood’s, Birds Eye Snider, cereal chemistry, special products, by-product utilization and Gaines Pet foods. Following World War II he worked in New York City as technical director of the Gaines Division in charge of research and development, production, purchasing and advertising.
In 1947 an opportunity became available to join the Federal Foods division of Fromm Brothers Nieman & Co., then the world’s largest producer of fox and mink furs. Considerable work needed to be done on fur animal rations, first for economic reasons and secondly because fur animal nutrition was little understood. He began feeding tests on 50,000 foxes which led to improved fur animal rations and to the development of a superior line of pet foods. He continued this development and production work until the day of his illness.
In 1970 at the age of 66 he joined the Beatrice Foods Research Center in Chicago where he became manager of human and animal nutrition research and manager of agri-products research. During this period he developed products as diverse as a high calorie tube feeding ration for hospitalized burn patients, pioneering the use of medium chain triglycerides, the modern process or manufacturing Switzer’s Licorice, Beatrice Better’n Egg and Bonkers Cat Treats and many others.
In 1984 at the age of 80, he retired from Beatrice Foods and rejoined Federal Foods and United Feeds as a consultant, active in the development of new products and manufacturing processes; an association that continued until his death.
He was a fellow of the American Association for the Advancement of Science, Fellow of the American Chemical Society, Member of the American Institute of Chemist and Member of the New York Academy of Sciences. He was preceded in death by his parents, his brother, Fred, his sister, Beatrice, his son, Willard and his grandson, John Graham Roberts.
